For Chef Johnny, dining out is an adventure—a restaurant should either bring you back to a place you’ve already been and loved, or take you somewhere entirely new and exciting. At Centro, he wants to invite guests on a journey across Mexico—from Jalisco to Baja, Chihuahua to Veracruz, Yucatán to Oaxaca—showcasing the delicious specialties that define each region and giving them a true sense of the local culture.
Johnny comes from a proud family of chefs (his mom, dad, and sister are all executive chefs!) and he got his start at the young age of 14 washing dishes in his dad’s kitchen. He quickly moved up the ranks, and at 18 decided to travel across Mexico and learn as much as he could about the cooking traditions of each state. In three years, he visited almost every state, learning from everyone he could—from famous chefs in bustling restaurants to abuelas in their home kitchens. At 21, he joined Richard Sandoval’s team, cooking at restaurants and competitions across the USA and Mexico—DC, New York, Los Angeles, Guadalajara, Oaxaca, and Aspen. He then joined Troy Guard in Denver, working the Kitchens of Guard + Grace, Los Chingones, and Mr. Tuna, before joining the Big Red F family at Centro Mexican Kitchen.
When he’s not cooking up a storm at Centro, you’ll find Johnny hanging out with his two daughters and playing soccer. He also loves seeking out new ingredients and old school recipes to include in his daily specials at Centro.
Heather HosfordGeneral Manager
Heather grew up on a cattle ranch in Sheridan, Wyoming and graduated from the University of Wyoming with degrees in Exercise Science and Nutrition. She’s always been interested in people’s relationship with food—where it comes from, how it’s prepared and consumed, and the effect it has on us. She loves to cook and eat, and her childhood on the family ranch instilled values like hard work, humility, and respect for others. It’s no surprise then, that she fell in love with the restaurant industry, where she gets to introduce people to healthy, delicious food every day and make new friends from a variety of backgrounds. She managed a family-owned, Southwestern-concept restaurant group in Eagon, MN, for 9 years before moving to downtown Minneapolis to manage a hip Latin-infused tequila / tapas bar. In the fall of 2017, she made her lifelong dream of moving to sunny CO come true. The Centro family welcomed her with open arms and she’s been leading the team with a smile ever since.
When she’s not at Centro, you’ll find “Hoss the Boss” enjoying the outdoors with her boyfriend Kyle, skiing, gardening, or just enjoying the sunshine with her dog and chickens.
